Soils
The vineyards are planted on a diverse mix of sandstone, granite, and shale soils. Sandy sandstone promotes excellent drainage, while granite contributes freshness and balanced water retention. Nutrient-rich shale provides structure and moisture retention, helping produce healthy vines and concentrated fruit.
Food pairing
This wine is excellent as an aperitif and pairs wonderfully with light dishes like a quinoa and avocado salad.
Vinification
Grapes are destemmed and macerated for 2 hours. Fermentation occurs in stainless steel tanks at approximately 54°F (12°C).

Mechanically harvested.
Tasting notes
Pale yellow with green highlights, this wine opens with fresh grassy aromas and vibrant notes of ripe grapes. The palate is fruity, crisp, and refreshing, offering excellent balance and a pleasant complexity.
